Yesterday we tried something exciting! Potato chips in the microwave! It's super easy but can become a bit tedious when you're making a larger batch, although it is definitely worth the wait.
2 large potatoes
3 tbsp olive oil
2 tbsp fresh rosemary, finely chopped
salt and pepper to taste
Wash your potatoes (obviously). Using a mandolin (or very carefully with a knife) slice the potatoes into very thin (1/16") rounds. Put the slices into a bowl, add 2 tbsp of the olive oil and toss until they are evenly coated. Cover a large (microwave safe) plate with a layer of parchment paper and arrange the slices in a single layer. You will need to cook these in batches unless you have the world's biggest plates and microwave to match. Microwave uncovered on high for 4 minutes. The chips should be golden and crispy but if they're not continue cooking in 30 second increments until they reach your desired crunchosity (yes, that's now a word.)
Meanwhile in a large bowl mix the remaining olive oil with the rosemary, salt and pepper. When you're finished cooking you chips add them to the bowl with the rosemary mixture and toss until coated.
This recipe is only one of many flavour possibilities. You could do just salt, toss with some malt vinegar or maybe even add a sprinkle or curry powder. You can use pretty much any herb/spice combination; the options are endless. Give this a try, it won't disappoint!

"Now this is a drink for a man!" - SNOWBALL COCKTAIL
Captain's Log, Stardate -310949.29360200354
This is a great holiday drink, but to be honest, we drink it year round. The ingredients sound horrible together on paper (I mean egg liqueur? Really?) but mix theem together and you'll understand why the holidays stretch all year round at our house..
For this drink you will need:
ice cubes
1 part Advocaat egg liqueur
3 parts lemon lime soda (Sprite, 7UP, etc.)
1 lime wedge
Fill a highball glass with ice, add the Advocaat and soda. Squeeze in some lime juice, stir and savour!
The Advocaat comes in rather large bottles, but do not fret, you will make use of it all once you try this drink! That's all, 4 simple ingredients (you can thank me later.)
